Nordic shrimp, Lobster and smoked Arctic char, spicy rice and egg galette, house kimchi, black peanuts, wild ginger miso sauce

Stinging nettle and stringbean Minestrone with wild boar bacon and wild salted herbs

Wild green salad with confit guinea hen, crisp vegetable remoulade, wild flowers, elderberry and wild grape ‘balsamic’

Optional : Pan-seared Foie gras, soubise, house mead, partridgeberry and highbush cranberry sauce
