Cheese fondue in a buckwheat crust with smoked duck and house pickled beets, mushrooms, Mixed greens and maple-elderberry vinaigrette

Old fashioned split pea soup with maple sap and maple smoked ham and maple sap, green and beech peas, wild salted herbs

Souffléed omelet with sea spinach, smoked arctic char, maple sumac cream with piperade, nordic shrimp and sea parsley
